1 ribeye steak

1 tbsp extra-virgin olive oil

1 butter

Instructions

1: Pat steaks dry, coat in oil and generously season with steak seasoning. Pat seasoning into the steak.

2: Heat up a cast iron on medium heat and melt 1-2 tablespoons beef tallow.

3: Start by searing the fat cap for 2-3 minutes or until a crust forms.

4: Sear one side of the steak with a meat press on top for 4-5 minutes.

5: Add more tallow if needed, flip and continue cooking for 4-5 minutes or until the steak reaches an internal temp of 110°-115°.

6: Turn the heat up to high and flip continuously to create a deep brown crust until steak reaches desired temp (about 130° for medium).

7: Let the steak rest with butter or chimichurri on top for 4-5 minutes before slicing against the grain and serving.
