Delicious crab stuffed mushrooms made with jumbo white mushrooms, cream cheese, chives, Old Bay seasoning, crab meat, and topped with a mixture of breadcrumbs and Parmesan cheese for a crispy finish.
Gently clean the mushrooms with a damp paper towel.
Carefully remove the stems and set them aside.
Place the mushroom caps in a microwave-safe dish and microwave for 1-3 minutes, depending on their size.
After microwaving, pat the mushrooms dry with paper towels.
In a bowl, mix together the softened cream cheese, finely minced chives or green onions, Old Bay seasoning, a dash of hot sauce, lemon juice, salt, and pepper.
Add mayonnaise and mustard to the mixture and stir until well combined.
Gently fold in the crab meat, being careful not to break it up too much.
Spoon the crab mixture into the mushroom caps, do not overfill.
In a separate bowl, mix equal parts breadcrumbs and grated Parmesan cheese.
Dip the stuffed side of each mushroom into the breadcrumb and Parmesan mixture to coat.
 Preheat the oven to 400°F.
Arrange the stuffed mushrooms on a baking sheet.
Bake for about 15-20 minutes or until the tops are golden and the mushrooms are tender. (Optional: Broil for the last 2 minutes.)
