Delicious homemade McGriddles made with a blend of cottage cheese, oats, and eggs, topped with turkey sausage patties and melted American cheese, all served with a drizzle of maple syrup.
Add the eggs, cottage cheese, oats, maple syrup, baking powder, salt, and vanilla extract to a blender. Blend on high until well combined.
Preheat the griddle to medium heat and add butter to the surface where you will pour the pancake batter.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancakes and the edges start to look set, about 1-2 minutes.
Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown and cooked through. Make a total of 8-10 pancakes and keep warm.
While the pancakes are cooking, add the turkey sausage patties on the other side and cook until browned, about 4-5 minutes per side. Remove and set aside.
Spray the mason jar lids with cooking spray and place them on the flat top. Add a small knob of butter and crack an egg into each lid. Season with salt and pepper.
Flip the eggs with a spatula after 2-3 minutes and remove the lid after flipping.
Place slices of American cheese on each egg and let the cheese melt for 1-2 minutes while cooking the other side.
Assemble the McGriddles by placing a pancake on a plate, topping it with the egg with melted cheese, turkey sausage, more maple syrup, and another pancake.
