These marinated veggie skewers are super easy to prepare and packed with flavor. With assorted vegetables and a delicious marinade, they are perfect for grilling. This was my first time doing them on skewers, and I think I prefer them in a stainless steel grill pan.

What you need

vegetable mix

1 vegetable mix

olive oil

¼ cup olive oil

balsamic vinegar

2 tbsp balsamic vinegar

garlic clove

dijon mustard

1 tsp dijon mustard

basil pesto

1 tbsp basil pesto

soy sauce

1 splash soy sauce

salt

pepper

garlic salt

lemon pepper

Instructions

1: Prepare the assorted vegetables.

2: In a bowl, mix olive oil, balsamic vinegar, minced garlic, Dijon mustard, basil pesto, lime juice, soy sauce, salt, pepper, garlic salt, and lemon pepper.

3: Marinate the vegetables in the mixture for a few minutes.

4: Skewer the marinated vegetables onto skewers.

5: Grill the skewers until the vegetables are tender and slightly charred.
